SWEET ONION PUDDING

 

 

 

        1 stick (1/2 cup) butter or margarine

        6 cups thinly sliced sweet onion

        3 tablespoons all-purpose flour

        2 tablespoons sugar

        2 teaspoons baking powder

        1 teaspoon salt

        6 large eggs

        2 cups whipping cream

        1 (3-ounce) package finely Shredded Parmesan Cheese

 

 

        MELT butter in a large skillet over medium heat; add onion, and

        cook, stirring often, about 30 minutes or until onion is caramel

        colored. Set aside.

 

        COMBINE flour and next 3 ingredients.

 

        WHISK eggs in a large bowl until blended; whisk in whipping cream

        and Parmesan cheese. Gradually add flour mixture, whisking until

        smooth. Stir in onion mixture, and pour into a lightly greased 13- x

        9-inch baking dish.

 

        BAKE at 350 degrees for 30 minutes. Makes 8 servings.
